Beet Pickled Eggs

Ingredients 

  • 8 large hard boiled eggs , peeled
  • 2 cups pickled beets juice, homemade or store-bought 
  • some flaky salt
  • fresh micro greens

Instructions

  1. Place the hard boiled eggs in a glass jar with a tight fitting lid.
  2. Poor beet juice over the eggs, making sure they are all submerged in the liquid.
  3. Cover and transfer to the refrigerator and marinate overnight.
  4. Slice in half and sprinkle with flaky salt and fresh micro greens. You can storage your eggs in the refrigerator up to one week!
