Keto White Cupcakes

  • 1 cup fine almond flour
  • 2 tbsp powdered erythritol
  • 1/4 cup milk of choice
    • 1 large egg
    • 1/2 tbsp baking powder
    • 1/4 tsp salt
    • 4 oz cream cheese, softened
    • 2 tbsp Butter, softened, cut into cubes
    • 1/2 cup powdered erythritol
    • 1 tsp Vanilla extract
      • 1-2 tbsp Heavy cream 


      1. Preheat the oven to 350°F. 
      2. Line mini muffin tin with cupcake cups and set aside. 
      3. Combine all dry ingredients together. Add wet ingredients to wet ingredients and stir well. Make sure to not leave any lumps. 
      4. Scoop the batter into muffin cups, filling about 2/3 of the way up. Bake for 10 minutes on the center rack. 
      5. In the meantime prepare frosting. Use a hand mixer to beat together the cream cheese and butter, until soft and fluffy. Beat in sweetener and vanilla. Add cream and beat again, the mixture should be really smooth. 
      6. Remove cupcakes from the oven and let cool an additional 10 minutes, during which time they will continue to firm up. Carefully go around the sides of each muffin with a knife and pop out.
      7. Decorate your cupcakes however you desire and enjoy.
