Energy Boost Salad

  • 28 oz hard boiled potatoes, quartered 
  • 2 whole avocados, sliced
  • 7 oz broccoli florets
  • 8 eggs, boiled
  • 7 cups mixed salad leafs 
  • 1 tsp black sesame seeds
  • Homemade mayonnaise (optional)
  • 7 tablespoons olive oil


  1. Preheat your oven to 400°F and place the potatoes on a baking tray.
  2. Drizzle them with some olive oil and sprinkle with sea salt.
  3. Roast for 30 minutes or until golden.
  4. Boil the broccoli over medium high heat until tender, refresh under cold water and set aside.
  5. Add your salad mix to a bowl and drizzle with 7 tablespoons of olive oil. Mix well and arrange on a tray.
  6. Top with broccoli, sliced avocados, baked potatoes and boiled eggs, as shown on the picture.
  7. Serve with homemade mayonnaise. (optional)
